The fresh broad bean salad is inviting and easy to make a side dish, perfect for spring when the beans are in season. A delicate and fresh recipe, ideal to accompany fish dishes, but also to eat as a single dish. To make the salad, you can use raw broad beans, or blanch them for a few minutes: if you have the patience to remove the outer wrapping from the larger seeds, you will get an elegant and pleasant dish, all inspired by tradition.

FRESH BEANS WITH THE POD 1 kg

How to prepare the broad bean salad

Shell the fresh broad beans, removing the legumes from the pod (1).

Blanch the beans in boiling water for 7-8 minutes (2).

Arming yourself with patience, remove the outer shell of the larger legumes (3).

Cut the pecorino cheese into cubes of about 1 cm (4).

Do the same with the salami (5).

Break two sheets of guttiau bread for each dish (6).

Arrange the beans on top. Spread the salami and pecorino cheese on each plate (7).

Season with oil, salt and pepper: your fresh broad bean salad is ready to be served (8).

Advice

For this recipe, we used Guttiau bread: a typical Sardinian preparation made with carasau bread that is seasoned with salt and oil. But you can use carasau bread, or even well-toasted slices of homemade bread.

Alternatively, for a more incisive flavour, place the salad on a serving dish and sprinkle it with croutons on which you have rubbed a little garlic.

You can eliminate the salami from the preparation, so as to make it a vegetarian dish, as in this variant; or enrich the salad with the ingredients you love the most. You can replace the pecorino with parmesan flakes, or choose a fresh cheese, such as Greek feta. Even the salami can be replaced with cubes of cooked ham, or with chicken breast cooked on a plate and then reduced to bites.
