120 gr of anchovies
320 gr of spaghetti

Preparation of Italian pasta with anchovies

We soften the butter a few seconds in the microwave or in a bain marie and do the spoon test. The butter should be soft as a cream.
Add the anchovies to the butter and mix with an immersion mixer.

In the meantime, cook the spaghetti in abundant, slightly salted water, since the anchovies are very tasty. Let’s put aside some cooking water and drain the pasta al dente.
With the heat off, sauté the pasta with the butter and anchovy cream. We add a little cooking water and continue stirring, to obtain a creamy paste.
We put the spaghetti on the serving plate and for an extra touch, we add a crumble of crusty bread.
To prepare the crispy bread, heat extra virgin olive oil in a pan, add the breadcrumbs, a pinch of salt and toast until golden brown.
