2 round aubergines
tomato sauce (a few tablespoons)
pizza mozzarella just enough
olive oil to taste

Preparation of Aubergine Pizza

First, we cut the aubergines into slices, not too thick, about half a centimetre. We transfer the aubergine slices to a baking tray with parchment paper. We practice small noodles on each slice of aubergine and add a drizzle of oil and salt.
Then we cook the aubergines in a fan oven at 180 degrees for about 10 minutes, just long enough to make them softer. Remove the aubergines from the oven and season them with tomato sauce, grated cheese, oregano, salt and a drizzle of oil. Bake our pizzas again and let them cook for 7-8 minutes, just long enough to melt the mozzarella well.
